Choc Nana Muffins

Ingredients:


Wet Ingredients
2 ripe bananas (mashed).
2 tbsp melted coconut oil.
2 eggs.
1 tsp vanilla extract.
1/2 cup almond milk.


Dry Ingredients:
2 cups of gf self raising flour.
2 tbsp coconut sugar.
1 x 100g block organic dark chocolate (chopped up)

Method:
1. Mix dry ingredients together - it would be nice to add cinnamon here but I didn’t have any.
2. In a separate bowl: Mash bananas, then add 2 eggs, mixing well. Once combined, add almond milk, coconut oil and vanilla, stirring until combined.
3. Mix wet ingredients and dry ingredients together, then using a tablespoon, spoon mixture into muffin cases.
4. Put in a preheated oven (180deg fan forced), and cook for 20 minutes.
Test with a knife or skewer (should come out clean) when ready!
