Black Bean Brownies

Filled with fibre and magnesium, these are my go-to treat lately!
RECIPE BELOW ⬇️⬇️⬇️⬇️

Dry ingredients:
· ¾ cup coconut sugar (or mashed bananas)
· 1.5 cups almond meal
· 1 tsp GF baking soda
· ½ tsp xantham gum (optional)
· 1 x 100g block good quality 90% dark chocolate, roughly chopped
· ½ cup pecans (roughly chopped) + extra for topping.
· ¼ cup cacao
Wet Ingredients:
· 2 eggs (or ¼ cup flax egg)
· ¼ cup almond milk
· 1 tsp pure vanilla extract
· 1 tbsp melted coconut oil
· 1 x 420 tin organic black beans (drained and rinsed)


METHOD:
1. Preheat fan forced oven to 180 degrees.
2. Combine all dry ingredients into a mixing bowl.
3. Blend beans, almond milk, vanilla and eggs in blender until roughly combined (approx. 15 seconds in blender).
4. Melt coconut oil in a mug.
5. Combine the liquid bean mix and coconut oil into the dry ingredients, mixing thoroughly until combined.
6. Pour into a lined baking tray, topping with extra pecans (this is optional).
7. Bake for 20 minutes.
